Macedon Ridge is one of the coolest vineyard sites in Victoria.
These unique geographical parameters present a perfect combination of fresh evenings and mild days leading up to harvest, lengthening the ripening period with the accumulation of intense fruit flavours and balanced natural acidity.

Our vineyards are cane pruned using a 2 cane, 2 spur system.
Each cane is further pruned to leave ten buds which allows us to control our yields at a consistency critical to quality production.

All blocks are managed with vertical shoot positioning (V.S.P) which decreases congestion in the fruiting zone and allows the sunlight to penetrate evenly over the bunches. This ensures our fruit ripens evenly enhancing natural fruit flavours.

Macedon Ridge aims to grow approximately 1.5m   canopy per kilogram of fruit. This crop to canopy ratio is higher than normal but gives us the potential for earlier ripening which is critical in our unique cool climate environment.

During the harvesting and pressing process it is critical to minimize the phenolic extraction. The fruit is hand harvested and each block is kept separate throughout the wine making process. We look for flavours in the Chardonnay of fresh citrus and fresh strawberry and rose petal flovours in the Pinot Noir.

After harvesting the fruit is sorted and any damaged bunches removed. This helps further control the level of phenolics and protects the elegance and length of the natural fruit flavours before pressing. The fruit is whole bunch pressed on a gentle Champagne cycle and only the first 500L of free run juice is kept.

The juices are fermented at quite cool temperatures. This helps preserve fruit characteristics and maintain finesse on the palate. After assemblage our wines undergo extended bottle fermentation on lees which modifies the characteristics of Chardonnay and Pinot Noir in a unique way. This contributes to the subtle yeasty flavours and fine bead, creating a perfect 'pris de mousse'
